Pepper Beef

A versatile meal served over fried rice, and it is one of my personal favorites. You can control your ratio of carbs and calories and protein based on how much of each part of the meal you make. All of our kids love the sweet ginger taste to the meat served over the fried rice!

1 pound sirloin steak sliced (or similar)
4 Green Peppers
1 medium onion
2 cups Soy Sauce
1 T white sugar
1/4 Tsp ground ginger
1 stick butter
6 cups prepared jasmine rice
3 eggs

Prepare rice per instructions. Slice steak thin and vegetables in 1/2 inch chunks. Combine 1 cup soy sauce, white sugar, and ground ginger in a sauce pan over low heat until sugar dissolves.

On hot griddle (Blackstone) cook steak and vegetables seasoned with butter salt and pepper to taste. When steak is done, pour ginger sauce mixture over steak and reduce. Remove steak and vegetables from griddle and fry your rice, seasoned with remaining soy sauce and butter.

Serve vegetables and steak over rice and enjoy!

Its easy to alter amounts if necessary, this recipe feeds our family of 6.
